First let me say that I am not endorsing the products at the end of this video, but the beginning of this video explains some common carpet odor issues and why they exist.  This video does a good job of explaining what causes most odors in carpet.  The primary odors in carpets are off gassing organic compounds that are rotting away and feeding bacteria at the same time. As organic fats and proteins are spilled on your carpet, mainly from food spills or pet deposits, they begin to break down and emit odor molecules. Those molecules are a by product of the organic decomposition.  So what can you do to get rid of them.

You need to remove or neutralize the organic material causing the problem.
